The elderberry (Sambucus nigra) belongs to the honeysuckle family (Caprifoliaceae). The shrub or small tree thrives in sunny to partially shaded areas, particularly in hedges, at the edges of forests, and along paths. In late summer, the small berries ripen in dense clusters and play an important role in both traditional herbal medicine and the kitchen.
The elderberries are small, round, and glossy, ranging from dark purple to black. They are encased in a thin skin and contain numerous soft, tiny seeds. As raw elderberries can be mildly toxic, they should only be consumed when processed or cooked.
The flavour of elderberries is intense and distinctive: sweet with a delicate, bitter note. The full-bodied, berry-like taste of the ripe fruit is characterised by a harmonious combination of sweet-sour and lightly bitter, earthy flavours.
