Rhabarbarum

Rhubarb (Rheum rhabarbarum) belongs to the knotweed family and is botanically classified as a vegetable, even though it is usually prepared like fruit. Its name originates from the Latin Rheum rhabarbarum, meaning “root of the foreigners” – a reference to its origin. Originating from the Himalayas, rhubarb is now cultivated in many regions, including our own fields.

The plant is characterized by large green leaves that grow on long, fleshy stalks. Depending on the variety, the edible stalks range in colour from green to deep red.

Rhubarb has a refreshingly tart flavour with a slightly tangy yet fruity note. Its taste varies depending on the variety – red stalks tend to be slightly sweeter, while green ones have a more pronounced acidity.
